Ingredients

  • 1 lb large shrimp, peeled & deveined, tails on

  • 1 red bell pepper, cut into 1-inch chunks

  • 1 yellow bell pepper, cut into 1-inch chunks

  • 1 orange bell pepper, cut into 1-inch chunks

  • 1 medium red onion, cut into wedges

  • 2 tbsp fresh parsley, finely chopped

  • 3 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • Salt & pepper, to taste

  • Metal or soaked wooden skewers

Directions

  • Prep the Shrimp & Veggies
    Pat shrimp dry. Cut peppers and onion into even-sized chunks for uniform cooking.
  • Make the Marinade
    In a bowl, whisk together olive oil, garlic, parsley, lemon juice, lemon zest, salt, and pepper.
  • Marinate the Shrimp
    Toss shrimp in half the marinade. Let sit for 10 minutes while prepping the skewers. Keep the other half of the marinade for the veggies.
  • Assemble the Skewers
