Burger Patties

  • 1½ lbs ground beef (80/20)

  • 1 tbsp sea salt

  • ½ tsp black pepper

  • 1 tbsp garlic powder

  • 1 tsp onion powder

  • Stuffed Blue Cheese Center
  • 4 oz crumbled blue cheese (nothing else—just the good stuff)

  • Blue Cheese Sauce (for topping)
  • 2 oz crumbled blue cheese

  • ¼ cup heavy cream

  • ½ tsp Worcestershire sauce

  • Salt and pepper to taste

  • Caramelized Onions
  • 2 large yellow onions, thinly sliced

  • 1 tbsp butter

  • Pinch of salt

  • 1 tsp balsamic vinegar (optional)

  • Other
  • 8 slices thick-cut bacon, cooked crisp

  • 4 brioche buns, toasted

  • 4 tbsp BBQ sauce (your favorite kind)

Directions

  • Caramelize the Onions
    – In a skillet, melt butter over medium heat.
    – Add onions and a pinch of salt. Cook slowly, stirring occasionally for 20–25 minutes until deeply golden and soft.
    – Add balsamic vinegar in the last 5 minutes if using. Set aside.
  • Make the Blue Cheese Sauce
    – In a small saucepan over low heat, combine crumbled blue cheese, heavy cream, and Worcestershire sauce.
    – Stir until the cheese melts and the sauce thickens slightly. Season with salt and pepper. Keep warm.
  • Prepare and Stuff the Patties
    – In a bowl, mix ground beef with salt, pepper, garlic powder, and onion powder.
    – Divide into 8 equal portions. Flatten 4 into thin patties.
    – Place about 1 tbsp of blue cheese crumbles in the center of each.
    – Top with the remaining patties and seal the edges well. Gently press to flatten and form evenly.
  • Grill or Sear the Burgers
    – Cook on a grill or skillet over medium-high heat for 5–6 minutes per side, until fully cooked and the cheese inside is melty.
    – Do not press down on the patties while cooking.
  • Assemble the Burgers
    – Spread BBQ sauce on the bottom bun.
    – Add the stuffed burger patty.
    – Spoon blue cheese sauce over the top.
    – Add caramelized onions and 2 crispy bacon slices.
    – Top it off with the toasted top bun.
