We’re talking slow-cooked, fall-off-the-bone oxtail, tossed in jerk spices, layered on a crispy crust, and drizzled with sticky-sweet jerk BBQ sauce like it owes you money.

2 lbs oxtails
2 tbsp browning
1 tbsp ketchup
1 tbsp jerk paste (or 2 tbsp dry jerk seasoning)
1 tbsp all-purpose seasoning
1/4 cup brown sugar
1 tsp onion powder
1 tsp garlic powder
1/2 tsp Accent (optional)
1/2 tsp black pepper
2 cups beef broth or water (for braising)
- For The Caramelized Onions
1 large onion, thinly sliced
1 tbsp butter
Pinch of salt
1 tsp brown sugar
- For The Jerk BBQ Sauce
1/2 cup BBQ sauce
1 tbsp jerk paste
1 tsp honey (optional)
- For The Pizza Base
1 pre-made thin crust pizza shell (12-inch)
1 cup shredded mozzarella cheese
1/2 cup shredded sharp cheddar cheese
Fresh parsley or sliced scallions (optional garnish)
Directions
- Braise the Oxtail
– Season oxtails with browning, ketchup, jerk paste, and dry seasonings.
– Sear until browned, then add broth or water.
– Cover and braise on low for 2.5 to 3 hours, or until fork-tender.
– Cool and shred meat from bones. Set aside. - Caramelize the Onions
– Sauté onions in butter with a pinch of salt and brown sugar.
– Cook low and slow for 25–30 minutes until rich, golden, and soft. - Make the Jerk BBQ Sauce
– Stir together BBQ sauce, jerk paste, and honey in a saucepan.
– Warm gently and set aside. - Assemble the Pizza
– Preheat oven to 450°F (or follow crust directions).
– Place store-bought crust on a baking sheet or stone.
– Spread a thin layer of jerk BBQ sauce.
– Add a mix of shredded mozzarella and sharp cheddar.
– Top with shredded oxtail and caramelized onions.
– Drizzle with more jerk BBQ sauce if you’re feeling wild. - Bake It
– Bake for 10–12 minutes or until cheese is melted and crust is crisp.
– Garnish with parsley or scallions. Slice. Serve. Dominate.
