4 oz rice noodles (cooked and drained)
1/2 cup shredded carrots
1 cup fresh spinach leaves (lightly wilted or fresh)
1/2 cup fresh bean sprouts
1/4 cup chopped green onions
1/4 cup fresh cilantro
- For the Pho-Inspired Dipping Sauce
1 lb beef bones (marrow or knuckle)
2 cups pho beef broth
2 cups beef bone broth
1 tbsp fish sauce
1-inch piece fresh ginger (smashed)
4 garlic cloves, smashed
1 whole habanero or jalapeño (leave whole for mild heat, slit open for more spice)
Juice of 1/2 lime
2 tbsp chopped cilantro
2 tbsp chopped green onions
- For Assembly
4 large flour tortillas
1 tbsp butter (for toasting burritos)
Directions
- Make the Pho-Inspired Dipping Sauce
– Add beef bones to a pot and cover with water. Bring to a boil for 10 minutes to remove impurities, then drain and rinse.
– In the same pot, add 2 cups pho broth and 2 cups beef bone broth. Return the cleaned bones, along with smashed ginger, garlic cloves, and the whole pepper.
– Bring to a gentle boil, then reduce to a low simmer and cook 1½ to 2 hours uncovered until the broth is rich and aromatic.
– Strain the broth, then stir in fish sauce, lime juice, cilantro, and green onions.
Keep warm for dipping or drizzle a little inside burritos. - Cook the Shaved Ribeye
– Heat oil in a skillet over medium-high heat.
– Add shaved ribeye, soy sauce, hoisin, garlic paste, ginger, and pepper.
– Sear for 2–3 minutes until browned and tender. Remove from heat and set aside. - Prepare the Filling (Layer, Don’t Mix)
– Lay out your cooked rice noodles and prepared veggies separately — do not combine.
– When assembling, you’ll layer ingredients inside each tortilla instead of mixing them together.
– This keeps the texture balanced and visually appealing once sliced. - Assemble the Burritos
– Lay a tortilla flat on a clean surface.
– Place a portion of rice noodles down the center first (base layer).
– Add shaved ribeye over the noodles.
– Top with spinach, carrots, bean sprouts, and a sprinkle of green onions.
– Drizzle lightly with the pho-inspired dipping sauce (optional).
– Fold in the sides and roll tightly into a burrito.
